Muffuletta

Simplified Italian sandwiches served on English muffins instead of the traditional Muffuletta bread.

Ingredients
  

Olive Dressing
  • 1 jar (5.75 oz.) pimento-stuffed green olives
  • 1 can (6 oz.) black olives
  • 1 clove garlic pressed
  • 1/4 cup chopped onion (only needs to be chopped in order to measure, if you want to guess, you can put in chunks)
Sandwiches
  • 6 English muffins
  • Creamy Italian dressing to taste
  • Italian seasoning to taste
  • Fresh ground pepper to taste
  • 12 slices Canadian Bacon
  • 18-24 pieces pepperoni
  • 1/4 pound thin-sliced turkey or salami
  • 6 slices mozzarella cheese
  • 6 slices provolone cheese

Method
 

Olive Dressing
  1. Chop in food processor on “chop” setting to make coarse mixture.
Sandwiches
  1. Spread the top of the muffin with olive dressing until you can’t see any bread except around the edges.
  2. Spread the bottom piece with Italian dressing.
  3. Sprinkle liberally with herbs and pepper.
  4. Layer meats, putting some on the top and some on the bottom, adding cheese to each, after meats.
  5. Broil both halves separately until cheese is melted and browned, about 4-5 minutes. Watch carefully!
  6. Flip top half over onto bottom half and enjoy.
